2023 Mayer Cabernet Yarra Valley – Timo Mayer is a small farm producing hand crafted, single vineyard wines. They believe that wines are made in the vineyard and therefore try to interfere as little as possible in the natural winemaking process. All of their wines are unfined and unfiltered to show the true expression of the land. Their aim is to make wines with a point of difference and to really showcase region and varietal to their best ability.
As always Tim puts his midas touch to work with whole bunch fermentation. Tension and freshness really drive this wine. Its extremely energetic in its youth. Expect notes of cassis, pepper, spices and juicy fruits. Finely knit tannins and exceptional length to follow.
