He foraged through the Clare Valley for his meals, finding wild rabbit and many other gourmet treats. With a cool growing season reminiscent of conditions of over a decade ago, the Pinot Gris bunches were monitored and sections selected at their peak desirability for the winery. Located in a natural saddle in the vineyard, the combination of richer soils and greater shade sees the varietal crispness maintained throughout the growing season.
Juicy fruits burst onto the palate – pears, apples and a touch of zesty goodness. Exceptional crispness maintained throughout the experience. Acidity carries the rich fruit seamlessly. Finish is long and refreshing. Delish!
