2022 Juniper Canvas Fiano Margaret River – Fiano is grown on their Karridale vineyard which is sustainably farmed following organic principles. Picked in two passes from two blocks. One batch was tank fermented for freshness of fruit & the other was wild ferment in barrel. 35% of the blend was matured in older barriques & puncheons for six months, with lees stirring to help build texture.
Pale straw, clear & bright. The bouquet reveals white florals with preserved lemon, honeydew melon & spicy lime notes, finishing with a burst of saline vigour. Expansive lemon curd & citrus flavours are complemented by hints of honey, with savoury salted hazelnut overtones. A pleasing slight chalky dryness provides definition; the finish is crisp & clean.
Excellent with dishes such as wild mushroom risotto or Fremantle sardine fillets stuffed with pancetta, capers & burghul with salsa verde.
