Gentle handling with a wild ferment in a small open top vessel and bottling without any fining or filtration allows the purity and intensity of Pinot Noir fruit to shine.
Dark cherry red in colour with intenese aromatics of wild raspberry and coffee. The bouqet continues onto the palate with added complexity of spice and fine tannins. A very well structured wine with a long, flavoursome finish.
Try pairing with lean game meats or wild mushroom tart.
