Valdespino Inocente Fino Dry Sherry 375ml Spain – With six centuries of sherry production under their belts, Valdespino lay claim to being one of the oldest sherry bodegas in the region. Their quality is world class and the bodega still ferment a proportion of their wines in wood, adding layers of complexity to the finish product. One of the few estates that age in solera far in excess of the DO regulations for all their styles of sherry.

This is a classic Fino Sherry produced in the traditional way using the ‘Solera’ and ‘Criadera system. This Fino is unique as it is produced from the grapes of one vineyard, located in the renowned Machamudo area of Jerez. It is also the only Fino Sherry fermented in casks of American Oak. It is then matured under a veil of ‘flor’ for over eight years. This gives Inocente Fino a truly superb and delicious dry fresh flavor, light golden in colour, delicate and pungent to the nose.

Fuller and rich but dry; with marvellous complex fruit, impeccable balance and a very long multi-dimensional finish. A great sherry. Serve chilled, between 8 and 10 degrees Celsius.
