2021 Even Keel Syrah Canberra District

2021 Even Keel Syrah Canberra District – The fruit is handpicked and fermented using wild yeast and 20% whole bunches, a small amount of Viognier skins are also added. It is plunged twice a day and pressed off skins after 20 days. The subsequent wine is then trucked overnight to our winery in Red Hill on the Mornington Peninsula. The wine is transferred to barrel and matured, predominately in seasoned oak for 10 months. The wine is then bottled without fining or filtration.
The nose shows lifted aromatics of dark berries, plum, blackcurrant, and black olive tapenade. A mineral and finely savoury palate, showing black fruits with a consistent and refreshing driving acid line that persists through the finish.
