2020 Sevenhill St Ignatius Cabernet Blend Clare Valley – Made from Sevenhill’s estate grown fruit, it is marked by aromas of violets, bramble and cigar box, along with bright red berry flavours. It’s intense varietal characters seamlessly integrate with the premium French oak.
The 2020 is Cabernet Sauvignon (52%), Merlot (28%), Malbec (14%) and Cabernet Franc (6%). The varieties are fermented separately in either the open slate fermenters or stainless steel tank and were pressed off skin at dryness, which was generally 10 to 14 days after harvest. The individual batches were blended to form the final wine in December 2019 and returned to barrel (French oak Puncheons, 35% new) for a further 10 months barrel maturation.
Each variety brings unique flavours and the blend leads to a wine of great complexity. Cabernet Sauvignon yields intense red berry character and firm tannins. Merlot shows violet perfume and has silky tannins that build a bridge to the tannin of Cabernet Sauvignon. Malbec brings deep colour and plum-like flavour, while Cabernet Franc has pronounced aromas of raspberries, blackcurrants and violets. The varieties are suited to Sevenhill’s cooler, later-ripening conditions. Vineyard management also contributes to low vigor in the vines and modest yields, ensuring a wine of impressive concentration.
