2020 Michael Hall Sang de Pigeon Chardonnay Adelaide Hills – Sang de Pigeon (pigeon’s blood) is a nod to Michael’s former life as a jewellery valuer. It’s the trade term for the colour of the finest rubies, invariably from the Mogok Stone Tract in Myanmar. The fruit for this pale-coloured Chardonnay was grown far to the south-east, in South Australia’s Adelaide Hills.

Low rainfall throughout winter and the subsequent growing season led to a very small crop. Hand-picked on the 18th, 26th and 27th of March from the Hill Block and Garden Vineyard, both in Piccadilly. Barrel-fermented with 25% malolactic, matured for 11 months on yeast lees in French oak (21% new), filtered and bottled.

A few words come to mind for this wine – delicate, elegant, superb balance and texture. It was an absolute delight to taste. Not to heavy or over flavoured. Just enough of everything in perfect harmony. Great fruit concentration, well integrated oak, exceptional texture and balanced acidity. What a pleasure this wine is.
